Ingredients
  1. One 4.9 ounce box Betty Crocker Ultimate Cheddar Mashed Potatoes
  2. 6 strips bacon, cooked crispy and finely chopped
  3. ½ cup shredded cheddar cheese, divided
  4. ¼ cup sour cream
  5. 2 cans refrigerated crescent dough (full-size sheets preferred, but crescent roll dough is okay too)
  6. Fresh chives, fine chopped,for garnish
  7. Non-stick cooking spray
Instructions
  1. Preheat your oven to 350 degrees F. Lightly coat a mini muffin tin with non-stick cooking spray. Set aside.
  2. Prepare the Betty Crocker Ultimate Cheddar Mashed Potatoes according to package directions.
  3. Once finished transfer to a medium mixing bowl. Add in the sour cream, ¼ cup cheddar cheese and half the bacon. Set aside.
  4. Unroll one pack of the crescent dough and lay it out flat on a cutting board. Using a 2-inch circular cookie cutter, cut out dough rounds. You need to get 12 rounds from each package of dough. Place one dough round over each cup of your mini muffin tin. Repeat with the other dough package.
  5. Using your finger tips, gently press the dough into the muffin tin cups, making sure there are no bubbles under the dough.
  6. Use a small cookie scoop (or a 1 tablespoon measuring spoon) to portion the mashed potatoes into each muffin tin cup. Then, use your fingers to gently push the potatoes into the cups a bit more.
  7. Sprinkle the remaining cheese over the top of each bite, and then sprinkle the remaining bacon over top of the cheese.
  8. Bake for 12 minutes, or until the crescent dough is golden on the edges.
  9. Remove from the oven and let rest 2-5 minutes, or until cool enough to handle.
  10. Transfer the bites to a serving platter and garnish with chives, if desired. Serve warm or at room temperature.

Ingredients
  1. 1 cup macadamia nuts
  2. 2 bananas
  3. 1 small papaya
  4. 4 limes (juice from the limes)
  5. 3 cups seedless watermelon balls or small squares
  6. 2 cups fresh pineapple chunks
  7. 1 cup freshly grated or unsweetened coconut
  8. 3 cups low-fat vanilla flavored yogurt
  9. 1/3 cup papaya seeds
Instructions
  1. Place the macadamia nuts in a food processor fitted with a steel blade and pulse them a couple of times just to chop them into large pieces. Then, place them in a non-stick heavy sauté pan and toast them over medium heat just until they turn golden, stirring constantly. Remove them to a heatproof dish or bowl and allow them to cool.
  2. Peel and cut the bananas and papaya flesh into small chunks and toss them in the lime juice. Place the banana and the papaya chunks in a large glass bowl with the watermelon, pineapple and coconut. In another bowl mix together the yogurt and the papaya seeds. Pour over the fruit and coconut. Toss to combine. Place in a serving bowl or coconut shells. Sprinkle the toasted macadamia nuts over the top and serve immediately

Ingredients
  1. 12 peeled hard-boiled eggs
  2. 1 cup flour
  3. 3 eggs
  4. 1 cup panko bread crumbs
  5. Oil for frying
  6. 4 Tbsp. mayonnaise
  7. 2 Tbsp. pickle relish
  8. 2 Tbsp. mustard
  9. 1 tsp hot sauce
  10. Salt to taste
  11. Pepper to taste
  12. Paprika, or seasoning of choice to top
Instructions
  1. Heat cooking oil for deep-frying in a medium-size pan over medium heat.
  2. Cut the hard-boiled eggs in half lengthwise. Gently separate the cooked egg white from the yolk and remove to a medium bowl.
  3. Coat the cooked egg white in flour, eggs, and panko bread crumbs. Carefully place eggs into the hot oil. Fry for 2-3 minutes, flipping halfway through. Remove from pan and drain excess oil on a paper towel.
  4. Add mayonnaise, relish, mustard, hot sauce, salt, and pepper to the yolks and mash until smooth. Fill a piping bag or plastic sandwich bag with yolk mixture. Pipe mixture back into the fried egg white, dust with paprika, and serve!

  1. 5 cups pecan halves, unsalted
  2. 1 cup whole almonds, unsalted
  3. 2 egg whites
  4. 2 Tablespoons water
  5. 2 cups granulated sugar
  6. 2 and 1/2 teaspoons ground cinnamon
  7. 2 teaspoons salt
Instructions
  1. Preheat oven to 300F degrees. Line two large baking sheets with parchment paper and spray with non-stick spray; or use a silicone baking mat. Set aside.
  2. Mix pecans and almonds in a large bowl. Set aside.
  3. Using an electric mixer, beat egg whites and water on medium-high speed until stiff peaks form, about 4-5 minutes. Add the sugar, cinnamon, and salt, gently folding until combined.
  4. Pour/spoon sugar mixture over nuts and stir to coat completely. Spread nuts over the baking sheets and bake for 45 minutes, stirring every 15. Allow to cool completely and enjoy. Store nuts at room temperature for a few weeks, covered.
