Ingredients
  1. 1 pound boneless skinless chicken breast - frozen
  2. ½ cup barbecue sauce
  3. 5 - 6 medium potatoes scrubbed
  4. 1 medium onion, chunked
  5. 2 Tbs olive oil
  6. ½ - 1 cup extra sharp cheddar cheese, shredded
  7. salt & pepper to taste
  8. 1 green pepper, chunked (optional)
  9. 4 - 6 ears of fresh corn, husk & silk removed
  10. ¼ cup butter, divided
Instructions
  1. Place the frozen chicken in the bottom of your crock pot and brush the barbecue sauce over the top.
  2. Chop the potatoes into 1 inch pieces and mix together with the onion, cheddar cheese, olive oil, salt and pepper and optional green pepper.
  3. place potato mixture into a large double layer sheet of aluminum foil and fold up sides to make a packet.
  4. Place potato packet on top of chicken.
  5. Cut each ear of corn in half and place on small squares of aluminum foil. Place a pat of butter and salt and pepper to taste on each corn and wrap up.
  6. Place corn on top and around potato packet.
  7. Cook covered on high for 5 hours or low for 6-8 or until the chicken is cooked through and the vegetables are tender.

  1. 1 tablespoon canola oil
  2. 2 chicken breasts (sliced into ½-inch strips)
  3. 2 tablespoons garlic (chopped)
  4. ½ tablespoon kosher salt
  5. ½ tablespoon freshly ground black pepper
  6. ¾ cup heavy cream
  7. ½ grated parmesan cheese
  8. ¼ cup pesto
  9. 3 cups penne pasta (cooked and drained)
  10. ¾ cup cherry tomatoes (halved)
  11. Parmesan cheese and chopped basil to garnish.
Instructions
  1. Heat the oil in a pan over high heat.
  2. Combine the chicken, garlic, salt, and pepper, cooking until chicken is browned.
  3. Mix in the heavy cream, parmesan, and pesto, stirring until evenly combined.
  4. Bring to a boil and cook until the sauce has reduced, about 5-7 minutes.
  5. Toss in the pasta and cherry tomatoes, stirring until evenly coated. Remove from heat.
  6. Sprinkle parmesan cheese and basil on top

Ingredients
  1. 6 chicken breasts (about 4 1/2 lbs)
  2. 2 cups flour
  3. 1 lemon, juice and peel
  4. 1 clove elephant garlic
  5. 3 1/2 Tbls. prepared minced garlic
  6. pure olive oil
  7. onion powder
  8. garlic salt
  9. white pepper
  10. black pepper
  11. dried oregano
  12. dried parsley
  13. powdered lemon peel
Instructions
  1. Slice each chicken breast in half lengthwise.
  2. Peel the elephant garlic and cut it into a coarse dice.
  3. Zest your lemon then cut it in half
  4. Put the flour in a gallon-sized zip-top bag. Place chicken into the bag with the flour. Seal the bag well. Shake it around to coat the chicken well. Take each piece of chicken out of the bag. Shake off any excess flour. Lay the chicken out on a board or plate and set it aside.
  5. Pour about 1/4 inch of olive oil into a large, non-stick pan and heat for a minute or two over medium-high heat.
  6. Add the jarred, minced garlic to the oil. Sprinkle in the fresh, diced elephant garlic. Give the garlic and oil a stir. Cook for a minute or two over medium-high heat to infuse the oil with garlicky goodness. When the oil starts to bubble, carefully put each piece of chicken in the pan.
  7. Cook over medium-high heat until the oil starts to bubble again. Season it by coating the top of the chicken with a thin layer of onion powder, garlic salt, white pepper, black pepper, dried oregano, and dried parsley. Cook for 3-4 minutes over medium-high heat. As it cooks, push the chicken around a little to let the oil flow in between the pieces of chicken. After 3-4 minutes, flip each piece of chicken over. Pieces of golden brown garlic should be stuck to the bottom. That’s the start of your chicken’s garlicky crust.
  8. Re-season the top of the chicken with a thin layer of onion powder, garlic salt, white pepper, black pepper, dried oregano, and dried parsley. Cook for another 3-4 minutes
  9. After about 3-4 minutes, flip each piece of chicken over again
  10. Re-season the top of the chicken with a thin layer of onion powder, garlic salt, white pepper, black pepper, dried oregano, and dried parsley then sprinkle on a layer of powdered lemon peel.
  11. Sprinkle with the fresh lemon zest.
  12. Squeeze one of the lemon halves over the pan, getting a little juice and lemon pulp on each piece of chicken. Cook over medium-high heat for 3-4 minutes.
  13. After 3-4 minutes, flip the chicken one last time. At this point, it should have a handsome brown crust on the bottom.
  14. Sprinkle with dried parsley. Squeeze the other half of the lemon over the chicken, getting a little on each piece. Let it cook for 8-10 minutes more. After that time, your chicken should have a good brown crust and be cooked completely through. Remove the chicken from the oil and heap on a platter

  1. 6 bacon slices, cut into 1-inch-wide pieces
  2. 1 medium head romaine lettuce (12 ounces), cut crosswise into 1/2-inch pieces
  3. 2 to 3 tablespoons Vinaigrette
  4. Leftover Garlic-Marinated Chicken Cutlets, thinly sliced crosswise
  5. 4 ounces feta cheese, crumbled (1 cup)
  6. 2 plum tomatoes, halved lengthwise and sliced crosswise 1/2 inch thick
  7. 1 avocado, halved, pitted, peeled, thinly sliced, and cut into 2-inch pieces
  8. Coarse salt and ground pepper
Instructions
  1. In a medium skillet, cook bacon over medium heat, stirring occasionally, until crisp, 5 to 8 minutes. Drain on a paper-towel-lined plate.
  2. In a large bowl, toss lettuce with vinaigrette. Place lettuce on platter; arrange bacon, chicken, feta, tomatoes, and avocado on top. Season with salt and pepper. Serve.
